3 Microwave Mug Cakes: Nutella, Peanut Butter and Coconut Raspberry

There are very few things in this world that make my heart sing like a slice of cake. A fluffy vanilla sponge with ample frosting, a chocolate orange brownie sprinkled with icing sugar – these are the things I daydream about. When I realised that it was possible to make cakes in the microwave, my mind was somewhat blown. No longer would I be forced to choose between my sugar addiction and laziness. I could have it all. No staring impatiently at the oven door for my victoria sponge to turn golden brown. No waiting for cupcakes to cool before smothering them in buttercream. Just whack some ingredients in a mug and pop it into the microwave for a minute. What a time to be alive.

These three microwave mug cake recipes are the perfect pick-me-up. They take no time at all to whip up and can be made with ingredients you probably already have in the house.
I can still recall my first foray into the world of microwave-mug-caks. I burnt it severely. The downstairs rooms of the house were quickly submerged in smoke and I was forced to take the hamster cage outside to avoid murdering it by way of freak baking accident. Needless to say I was rather disappointed by the whole thing. Not only was I forced to spend my Sunday evening sitting outside in the cold with a hamster, but I was also doing so without the comfort of a delicious warm cake.
I’m sure this story hasn't filled you with confidence in my authority on the microwave-baking world. But not to worry, I have since this fateful day become quite the expert. Practice makes perfect, and when practice involves eating cake one can make progress surprisingly quickly. The moral of my inexperienced baking venture is to be careful with your times. Every microwave differs slightly meaning it might take slightly longer/shorter for your cake to bake. That means for the minute or so your cake is in there, you watch it like a hawk.
Method
  1. Whack all of the ingredients into a bowl (if I'm feeling lazy I'll put them straight in to the mug)
  2. Stir until all of the ingredients are combined
  3. Pour the mixture into your mug (make sure it's a big one as they rise a lot) 
  4. Pop it into the microwave for 1 minutes (times may vary, this is based on a Panasonic Combination Microwave)
  5. Top with whipped cream/vanilla ice cream/whatever takes your fancy 
  6. Dig in

Ingredients

1 // Coconut Raspberry Cake
  • 1 ½ tablespoons caster sugar
  •  ½ teaspoon baking powder
  • 2 tablespoons plain flour
  • 1 tablespoon melted butter
  • 1 tablespoon milk 
  • 1 teaspoon desiccated coconut 
  • 5 raspberries
2 // Nutella Brownie
  • 5 tablespoons Nutella
  • 2 tablespoons plain flour
  • 1 large egg





3 // Peanut Butter Chocolate Cake
  • ½ tablespoons plain flour
  • 1 tablespoon caster sugar
  • 1 tablespoon cocoa powder
  • ¼ teaspoon baking powder
  • ½ tablespoon smooth peanut butter
  • 1 tablespoon milk
  • ½ tablespoon vegetable oil
