Oreo Cheesecake Recipe


I used to find the idea of cheesecake absolutely repulsive. Why on earth anyone would defile a beautiful dessert with cream cheese was frankly beyond me. I don't like Philadelphia on my bagels, let alone my cake. A few years ago though, I gave in and had a slice of white chocolate cheesecake at a restaurant. The rest, as they say, is history. Now cheesecake is one of my favourites. For Christmas last year, my sister and I were in charge of desserts. She made her famous chocolate orange brownies and I decided on an Oreo cheesecake. It went down a treat and I've been eager to make it again since. With a few simple toppings, it's also quite easy to make look professional if you're hoping to impress at a dinner party.


Ingredients 
Base:
  • Two standard packs of Oreos 
  • 115g melted butter 
Filling:
  • 500g of Philadelphia Cream Cheese (I've used both full fat and light in the past and both seem to have worked well so it depends entirely on how indulgent you're feeling)
  • 175g Icing Sugar
  • 1 teaspoon of Vanilla Extract
  • 300ml Double Cream
  • 12 smashed Oreos
Toppings:
  • Whipped double cream
  • Quartered Oreos 
  • Crushed Oreos

Method 
  1. Smash the oreos in a sealed sandwich bag using a rolling pin. Mix in a bowl with the melted bowl. Once fully incorporated transfer to a springform tin, pressing down to create the base. Place in the fridge to set
  2. Mix cream cheese and icing sugar together before adding the vanilla extract and double cream 
  3. Whisk until thick and forming peaks (I use a KitchenAid for this but you could also use a handheld electric whisk)
  4. Fold in smashed Oreos, I like to make sure there are still some bigger chunks in there to give the cheesecake more texture 
  5. Once fully mixed, transfer to tin on top of the set biscuit base 
  6. Place in the fridge overnight
