The Perfect Peanut Butter Blondies

Peanut Butter has had a place in my heart from a young age. I like to incorporate it into my daily life as much as possible; in sandwiches, with apple slices or in heavenly squares of baked goodness. I love these peanut butter blondies for those rare moments when I'm not feeling chocolate.


  • 250g Plain Flour
  • 2 Teaspoons Baking Powder
  • 200g Butter 
  • 250g Crunchy Peanut Butter (I use Whole Earth)
  • 350g Caster Sugar
  • 2 Large Eggs
  • 2 Teaspoons Vanilla Extract 
  • 200g Chopped White Chocolate 


  • Preheat the oven to 170C and line a square cake tin with butter and greaseproof paper
  • Cream together the butter, peanut butter and vanilla extract until fully combined 
  • Add the caster sugar and egg. Mix. 
  • Add flour and baking powder. Mix. 
  • Add chopped white chocolate. Mix.
  • Transfer the mixture into the pre-prepared cake tin and bak in the oven for 30 minutes 
  • Allow to cool and cut into squares 
  • Enjoy!
